This  easy warming south indian beef curry recipe  has a good bit of heat to it. Make sure to serve with lots of rice to round out the meal.



  1. 2 tablespoons canola oil
  2. 1 medium onion, thinly sliced
  3. 12 fresh curry leaves or 2 bay leaves
  4. 6 garlic cloves, grated
  5. 4 teaspoons finely grated peeled fresh ginger
  6. 1 tablespoon tomato paste dissolved in 1/2 cup of water
  7. 2 teaspoons ground coriander
  8. 1 teaspoon garam masala
  9. 1 teaspoon cayenne
  10. 1/2 teaspoon ground turmeric
  11. 4 small dried hot chilies
  12. 4 star anise pods
  13. Two 3-inch cinnamon sticks
  14. 1 3/4 pounds boneless beef short ribs, cut into 3/4-inch pieces

  1.  At First In a medium enameled cast-iron casserole, heat the oil until shimmering.
  2. Then add the onion as well as curry leaves and then cook over moderate heat until they are lightly browned, about 7 minutes.
  3. After that add the garlic, ginger and cook until fragrant, for 1 minute.
  4. Then Stir in the dissolved tomato paste with the coriander, garam masala, cayenne, turmeric, dried chilies and then add star anise and cinnamon sticks.
  5. After that add the ribs, season with salt and stir until coated with spices.
  6. Then Cover partially and cook over very low heat until the meat is tender, about 1 hour and 30 minutes.
  7.  Spoon off as much fat as possible and discard the star anise, cinnamon sticks and bay leaves, if using.
