Idli sambar recipe | Indian Food Recipes

Idli sambar recipe is known a sambar recipe for idli-dosa. Idli, dosa’s is incomplete unless it is served with a delicious lentil based curry or soup. In India’s many region, idlis or medu vada are even dipped in this so called sambar or curry or soup then served. Additionally it is then topped with coconut chutney which gives an immense pleasure to your tongue.It is generally prefered the sambar prepared just with lentil aka idli tiffin sambar and not with coconut.

Sambar was first originated in karnataka according to wikipidia. In kannada ‘sambaru padharatha’ means mix of spices and pickles. This recipe of sambar goes very well with the meaning of sambar.

Let’s start with Idli sambar recipe.

Ingredients:

For masala:

  • 1 tsp cumin seeds / jeera
  • 1 tsp urad dal
  • 2 tsp coriander seeds
  • 1 tsp chana dal
  • ¼ tsp methi seeds / fenugreek seeds
  • 5 kashmiri red chillis, dried
  • few curry leaves
  • 1 tsp oil
  • ¼ onion, roughly chopped
  • ½ tsp garlic paste / 3 garlic cloves
  • ¼ cup coconut, fresh / desiccated
  • small gooseberry sized tamarind
  • ½ tsp garam masala powder
  • water as required, to blend smooth

For hotel style sambar:

  • 1 tsp oil
  • ½ onion, diced into cubes
  • ½ potato, diced into cubes
  • ½ tsp turmeric powder
  • salt to taste
  • ¼ cup beans, chopped
  • 1 cup cooked toor dal
  • 3 cups water or as required, to adjust consistency
  • small piece of jaggery / gud
  • few coriander leaves, chopped

For tempering:

  • 1 tsp oil
  • ¾ tsp mustard seeds
  • ¾ tsp urad dal
  • pinch of hing / asafetida
  • few curry leaves

Instructions of Idli sambar recipe:

Hotel style sambar masala recipe:

  1. First add oil in a wide pan.
  2. Then add cumin seeds, chana dal, coriander seeds, urad dal, methi, red chillis and few curry leaves.
  3. Now add some onions and garlic paste with them.
  4. Then switch off the flame and add coconut.
  5. After that, add a piece of tamarind and garam masala powder.
  6. Blend to smooth paste.

Hotel style sambar recipe:

  1. At first, add a tsp of oil in a large kadai and saute diced onions till they sweat.
  2. Now add potatoes and fry them for a minute.
  3. Along with water add turmeric and salt to taste.
  4. Then add beans and cook for a minute.
  5. After that, add prepared masala paste and give a good stir.
  6. Boil it for 5-8 minutes.
  7. Then add cooked dal.
  8. Add 2-3 cups of water to get desired consistency.
  9. Then add a small piece of jaggery.
  10. Prepare the tempering and pour it to sambar.
  11. Add few chopped coriander leaves.
  12. Then give a good mix.
